DAHDAS (da-dus)
dahdas = my dadas = my fathers.

​​1962 is where it really started.

​

the year my father was born.

one of the greatest chefs i have and ever will have known. 

​​​

cooking was his love language. 

the joy in watching people enjoy his food was enough.

this recipe has been passed down through generations by tasting, adjusting and knowing.

he taught me to respect ingredients, the components that make flavour.

he taught me to wait for the oil to speak, to never rush.

flavour is something you create, it's built, it's a process.

​

for years i looked for a taste similar on the shelves and never found it.

jars of 'curry' that flattened a whole region into one word.

pastes mixed up with sugar, preservatives and seed oils. 

nothing tasted like Karnataka.

nothing tasted like his kitchen.

​

so, i made it myself.

​

its semi- traditional.

the base is his. the rest is mine.

dahdas taste paste is also made with 100% extra virgin olive oil.

​one product, real ingredients, real flavour. 

marinade? spread? dip? curry paste? tick tick tick tick.

​

this brand is something my father and i spoke about for years but we never quite took that leap of faith.

 

though my heart is broken,

i know that time is now.

the tamarind that hangs over the roadside
an abundance of deep red chillis
curry leaves hitting hot oil,
a sound before a flavour
 
thats what this jar holds
the real thing, the way its made at home
 
most people have never eaten Mangalorean food
thats why we made it
 
this coast has
one of the greatest cuisines of india and,
it deserves a jar on your shelf.
